Here is my second rice cooker recipe – tomato rice with mint. I have already posted tomato rice which is prepared with no dry masalas. It uses shallots, fresh cumin and red chillies but this one is more like biryani but with store bought masalas and mint and this can be prepared quickly on a weekday and it’s a perfect bachelor friendly recipe too.
Couple of friends was asking me about rice water ratio for rice cooker. I usually go with 1:2 ratio. For 1 cup of rice, I add 2 cups of water and when I was using my regular (not non-stick) rice cooker I used to add ½ tsp of oil so that rice stays non-sticky and its easy to clean also. And I follow the same with my non-stick rice cooker also. I will share more about rice cooker as I post each and every recipe.
For this recipe, I went with pulsing the mint and green chillies. For my pulao, I didn’t do that so as to retain the color. But you can add them directly too. Also I added both green chillies and red chilly powder. You can adjust the proportion according to your taste or either goes with one of them. The biryani flavor comes from fennel seeds, garam masala and mint.
Ingredients:
- Oil – 2 to 3 tsps
- Fennel Seeds – 1 tbsp
- Mint leaves – 1 cup
- Green Chillies – 2
- Onion – 1
- Ripe Tomatoes – 5
- Garam Masala – 2 tsps
- Red Chilly Powder – 1 tsp
- Salt – 2 tsps (as required)
- Rice – 2 cups (I used regular raw rice)
- Water – 4 cups + water for soaking.
- Finely Chopped Cilantro – 2 tbsps
Prep Work:
- Finely Chop the onions and tomatoes.
- Wash the rice and soak it in water.
- Remove the stems from mint leaves and pulse it in blender along with green chillies without adding any water.
Steps:
- Heat the kadai and add the oil.
- Once the oil is hot, add the fennel seeds and onions.
- Saute them till the onion turns translucent.
- Now add the ground mint and green chilly mix and cook for couple of minutes till the raw smell of mint goes.
- Then add the chopped tomatoes, salt, red chilly powder and garam masala powder.
- Mix well. Cover and cook for 5 minutes.
- Mash the tomatoes well with ladle and cook till the tomatoes become soft. Turn the heat off.
- Now drain the water from the soaked rice and add it to the rice cooker.
- Add the tomato mix and 4 cups of water.
- Check for salt. If required add more.
- Turn on the rice cooker and let it do its work.
Once the rice is done, let it rest for 5 minutes and slowly mix the rice.
That’s it. Tomato rice is done. Serve it hot with your favorite raita.
Tomato Rice With Mint | Rice Cooker Recipes

Notes
You can skip either one too.
You can pulse the cilantro along with mint.
