    Eggless Tutti Frutti Nut Loaf | XMas Special

    Merry Christmas and Happy Holidays.

    Hope you are all enjoying your holiday break. Holiday season calls for some baking. Thought of preparing something simple with the ingredients that I have in my pantry. I had some tutti frutti so thought of preparing this tutti frutti, raisins and nut loaf for this Christmas. This is an eggless and alcohol less version.

    This holiday season is pretty hectic for me. Lot of things is happening around at work and home. Kiddo who is enjoying his winter break wanted to bake. I couldn’t say no to him so went with this simple loaf recipe. Had to shelf my plum cake for later sometime. I have big loaf pan and the amount of batter that I prepared for this recipe is less for that pan. But still went ahead and baked in that. So my slices are comparatively smaller than the regular loaf. Here is the simple recipe that I followed. I used yogurt and milk as the egg replacer.

    Ingredients:

    Dry Ingredients:

    • All purpose flour – 1.5 cups
    • Baking Powder – 1.5 tsps
    • Baking Soda – ½ tsp
    • Sugar – ¾ cup

    Wet Ingredients:

    • Vegetable Oil – ¼ cup + 1 tbsp + 1 tbsp
    • Milk – ¼ cup
    • Water – ¼ cup
    • Yougurt – ¼ cup
    • Apple Cider Vinegar – 1 tbsp

    Other Ingredients:

    • Tutti Frutti – 3 tbsps
    • Raisins – 2 tbsps
    • Chopped Pistachios, cashews and almonds – 3 tbsps

    Steps:

    • Preheat the oven to 350 degree F.
    • Sift the all purpose flour.
    • Add the baking poweder, sugar and baking soda and mix well.
    • To this add the tutti frutti and raisins and mix and make sure the dry fruits are well coated with the flour.

    • Now in a separate vessel mix the wet ingredients and mix well.

    • Slowly add this mix to the dry ingredients and incorporate well.

    • Now add the chopped nuts and 1 tbsp of oil and mix well.

    • Grease the loaf pan with 1 tbsp of oil and add the batter and bake it for 45 minutes or until a toothpick when inserted comes out clean.

    Ingredients

    Notes

    A tsp of vanilla essence can be added.
    Instead of baking it in loaf pan, you can bake it in cake pan also.
    Whipped cream with peppermints will be a perfect topping.

        Yes you can. But make sure its melted. The loaf will be comparatively moist. Thanks.
