Asian Pasta Salad

I love fusion cuisines and it lets you experiment different combinations. One of my successful fusion experiments with pasta that got published in Salis Online Magazine is the Spaghetti pulav. That made me to try to some more fusion with pastas. Today’s fusion recipe is also one of our favorites and I tasted this at my work for the first time. This is also no cheese pasta which means no need to warm it up and perfect for lunch boxes.

Somehow kids like the noodles shape and as Vaandu loves Hakka Noodles, I thought he would love this for sure. When I was talking about this pasta with my colleague, he gave me the recipe right away. The key thing about this recipe is the ingredients that are being used. These are not any exotic hard to find ingredients. All you need is Peanuts, Peanut Oil, Soy sauce, Flat leaf / Italian or Curly parsley and Sesame seeds. That’s it. You can prepare this wonderful fusion pasta recipe. The original recipe that I tasted had bell peppers and purple cabbage. As kiddo didn’t like the purple cabbage I just added the bell peppers for this. You can also add chilly or schezwan sauce to add more kick to it.

I being me tried substituting peanut oil with olive oil and parsley with cilantro. I won’t say it was bad. It was good but didn’t taste the same. I agree there is a huge difference between peanut oil and olive oil but I wanted to know more about cilantro and parsley. What makes that huge difference? Here is an interesting read.

I used thick angel hair pasta for this. You can use linguine or thin angel hair too. Cooking is fun. You can mix and match and come up with your own dressing that your family likes.

Here is my non-spicy version,

Ingredients:

  • Angel hair pasta – 4 oz. (I took half of the 8 oz. package)
  • Water for cooking the pasta.
  • Soy sauce – 1 tbsp.
  • Peanut oil – 2 tbsps.
  • White Sesame seeds – 1 tsp
  • Black Sesame seeds – 1 tsp
  • Finely chopped Green onion – 1
  • Chopped colored bell peppers – ¼ cup
  • Salt – ½ tsp
  • Oil (of your choice) – 1 tsp.
  • Unsalted Roasted Peanuts – ¼ cup
  • Finely Chopped Parsley – 3 tbsps.
  • Salt and Pepper – as required

Steps:

  • Cook the pasta according the package directions.

  • I added the half tsp of salt and oil in the water. I didn’t add salt further as I went with regular soy sauce, not the low sodium one.

  • To the cooked pasta, add the remaining ingredients and mix well. That’s it.

Notes:

  • Rice vinegar and chilly sauce can be added for more Asian flavor.
  • Cabbage and carrots can be added either half cooked or raw.
  • If you are using salted peanuts, adjust the salt accordingly.
