Araichuvitta Vathal Kuzhambu (Vathal Kuzhambu with coconut)

This is a lip-smacking yummylicious vathal kuzhambu prepared with fresh ground coconut masala along with onions, tomatoes and sun dried fryums (I used manathakkali here)  unlike the regular vathal kuzhambu where only sun dried fryum is used. This is much similar to kalyana vathal kuzhambu served in weddings.

This is what my mom does when she watches cooking shows in TV. (She does this even now :-)) She just writes it down in any available note book. Look at the square note books :-) So when she comes to US or when I go there, I bring all these recipes and try with or without variations. I tried writing the recipe once in Tamil, uffff I couldn’t write it as fast as she can. It was me who wrote 4 essays with in 2 hrs for my tamil II paper during my 10th grade, but now struggling a lot. Need to improve my tamil writing  :-)

 AraichuVittaVathalKuzhambu  

Today I made this dish araichuvitta vathal kuzhambu from the above note book. (We have tried this recipe a lot before) This recipe is from the chef  “Menu Rani Chellam”. I think Amma wrote this down from her Jaya TV show. Yummy vathal kuzhambu with grinded coconut and poppy seeds. One of my all time favorite dish :-) You can find my traditional vathal kuzhambu here

The variations that I did in this recipe,

  • In the original recipe, the chef added dried red chillies for tempering and also red chilly powder after adding the grinded masala. I skipped both and used red chillies only for the masala.
  • Also I increased the coconut quantity and reduced the dhaniya seeds according to our taste.

VatralKuzhambu

 

Ingredients:

  • One medium sized onion
  • Tomatoes – 2
  • Salt – 2 tsps (as per taste)
  • Tamarind Juice – 1 cup of juice extracted from gooseberry sized tamarind or dilute 2 tsps of tamarind paste in 1 cup of water.
  • Turmeric – 1/2 tsp
  • Manathakkali Vathal – 1 tsp

For Tempering:

  • Oil – 2 tbsps
  • Mustard seeds –  2 tsp
  • Methi seeds – 1 tsp
  • Urad dhal – 1 tsp
  • Channa dhal – 1 tsp
  • Curry leaves – 1 strand
  • Hing – 1/2 tsp

For Grinding:

  • Half of the medium sized onion
  • Coconut – 3 tbsps
  • Dhaniya/Coriander seeds – 2 tsps
  • Poppy seeds – 2 tsps
  • Red chillies – 4

Steps:

  1. Saute one half of the medium sized onion till they translucent by adding 1 tsp of oil.
  2. In the same kadai, dry roast the ingredients given under grinding.
  3. Let them cool and grind them together by adding water.
  4. Heat the remaining oil in the kadai.
  5. Once the oil is hot, add mustard seeds. As they start to splutter, add methi seeds, heeng, urad and channa dhal.
  6. Now add the vathal. (I used manathakkali vathal)
  7. Fry them for a minute and then add the remaining half of chopped onions and curry leaves. Let it cook till onion turns translucent.
  8. Now add tomatoes, salt and turmeric powder. Mix well and cook till the tomatoes are soft.
  9. Add the extracted tamarind juice Let it simmer for about 5 minutes.
  10. Now add the grinded masala and simmer it for about 7 minutes. (add water according to your consistency and if you are adding water, let it simmer for couple more minutes).

And thats it, yummy araichu vita vathal kuzhambu is ready.
