Araichuvitta Vathal Kuzhambu (Vathal Kuzhambu with coconut)
This is a lip-smacking yummylicious vathal kuzhambu prepared with fresh ground coconut masala along with onions, tomatoes and sun dried fryums
One medium sized onion
Tomatoes - 2
Salt - 2 tsps
as per taste
Tamarind Juice – 1 cup of juice extracted from gooseberry sized tamarind or dilute 2 tsps of tamarind paste in 1 cup of water.
Turmeric - 1/2 tsp
Manathakkali Vathal - 1 tsp
Oil - 2 tbsps
Mustard seeds - 2 tsp
Methi seeds - 1 tsp
Urad dhal - 1 tsp
Channa dhal - 1 tsp
Curry leaves - 1 strand
Hing - 1/2 tsp
Half of the medium sized onion
Coconut - 3 tbsps
Dhaniya/Coriander seeds - 2 tsps
Poppy seeds - 2 tsps
Red chillies - 4
Saute one half of the medium sized onion till they translucent by adding 1 tsp of oil.
In the same kadai, dry roast the ingredients given under grinding.
Let them cool and grind them together by adding water.
Heat the remaining oil in the kadai.
Once the oil is hot, add mustard seeds. As they start to splutter, add methi seeds, heeng, urad and channa dhal.
Now add the vathal. (I used manathakkali vathal)
Fry them for a minute and then add the remaining half of chopped onions and curry leaves. Let it cook till onion turns translucent.
Now add tomatoes, salt and turmeric powder. Mix well and cook till the tomatoes are soft.
Add the extracted tamarind juice Let it simmer for about 5 minutes.
Now add the grinded masala and simmer it for about 7 minutes. (add water according to your consistency and if you are adding water, let it simmer for couple more minutes).
And thats it, yummy araichu vita vathal kuzhambu is ready.
