    Baked Broccoli

    This is a simple baked broccoli recipe topped up with cheddar cheese.  It is a simple but yet crunch and delicious recipe.According to vaandu (my kiddo), fruits and veggies are snacks. He doesn’t prefer eating it along with rice. I need to hide them if I have to give veggies along with rice. But touchwood, for snacks I don’t need to do it that way. :-) This baked crunchy broccoli is his all time favorite. You can bake asparagus, brussel sprouts in the same way too.

    BakedBroccoli  

    Ingredients:

    • Broccoli – 1 big flower (10 florets)
    • Olive oil – 4 tbsps
    • Orange zest (Any citrus zest) – 2 tsps
    • Salt – a pinch (see notes below)
    • Pepper – 1 tsp
    • Cheddar cheese or to your preference (grated)  – 2 tbsps or more according to your taste

    Steps:

    • Clean the broccoli florets and pat dry.
    • Mix olive oil, salt, pepper and the zest and whisk together.
    • Preheat the oven to 350F
    • I used a cookie baking tray for baking this. I covered the tray with aluminum foil and sprayed the same with cooking oil.
    • Mix the broccoli and the olive oil mixture , make sure all the broccoli florets are coated well with the olive oil mixture and bake it for 20 mts.
    • Now add the grated cheese and bake it for 10-12 minutes or  until the broccoli becomes crunchy. (Not more than 15 mts)

    Notes:

    • As I am using cheese, I didn’t add salt. If I used cheddar, I do add a pinch of salt and if I use parmesan, I don’t use salt at all.
    • You can use any citrus zest, be it lime or lemon or orange. I have tried all three and all tastes good.
    • You can also use flavored olive oil, garlic infused ones are really good.
