    If you are getting bored with your oatmeal and smoothies and looking for alternatives, I have a perfect recipe for your – tofu scramble or scrambled tofu. Yet another teen-approved recipe like the pesto mozzarella sandwich. All you need is 15 minutes, and you can make this delicious and healthy breakfast with tofu which you can serve in multiple ways, and I have also shared that below. Do check it out.

    This tofu recipe is basic; you can customize it according to your taste and preference. It’s, of course, vegan, nut-free, and gluten-free. While I have made it as a breakfast recipe, you can use this scrambled tofu in your salads and serve it as a side for your lunch. This tofu scramble is a great protein-packed side for all vegans and vegetarians. 

    Ingredients required

    We only need a handful of ingredients, and as I used this scrambled tofu for my breakfast burrito, I used taco seasoning, but you can use the spices/flavoring of your choice. 

    Oil – I used cold-pressed peanut oil, but you can use the oil of your choice. 

    Onion – I used only ½ cup of chopped onion for this recipe, and you can make this recipe without onions.

    Tofu – I have used extra-firm tofu, but you can also use firm ones. You don’t need to 

    Spices – I went with ground turmeric, onion powder, salt, ground pepper, and taco seasoning. Onion powder adds a nice along with sauteed onions, and I recently started adding it to my dishes frequently.

    Nutritional yeast – This adds a nice cheesy flavor to the scrambled tofu, and I highly recommend not skipping this ingredient. It’s readily available online and in groceries. 

    Variations

    • Instead of taco seasoning, add cumin + paprika or Italian seasoning + ground pepper. Alternatively, you can make this scrambled tofu with salt and pepper and serve it with hot sauce or other condiments as per your choice.
    • You can make it more colorful and healthy by adding vegetables. After sauteing onions, add finely chopped bell peppers, spinach, grated carrots, cabbage, or zucchini. Ensure the veggies have a crunch, and do not overcook them or make them soggy. 
    • Add 2 to 3 tbsps of plant-based milk if the scrambled tofu is dry. 
    • I used cilantro just to garnish, but you can add chives, cilantro or parsley for added flavor.

    Ways to serve tofu scramble

    • With toast – You can serve scrambled tofu with toast, jam, and sauces.
    • Sandwich –Like a pesto sandwich, you can place this scrambled tofu instead of cheese and make a delicious sandwich. 
    • Burrito  – As you can see in the picture, I used the this scramble and made a scrambled tofu breakfast burrito. I used TJ’s habanero lime flour tortillas (not sponsored). 
      • Warm the tortilla, spread some guacamole, and add 3 to 4 tbsps of scrambled tofu and beans. Roll it into a burrito and enjoy.
    • Salads – You can add this scrambled tofu to your salads for a filling low-carb, protein-packed lunch. 

    How to make tofu scramble

    • Crumble the tofu like below and no need to press the tofu for this recipe.

    • Add oil to a pan or skillet; add the chopped onions when hot. Saute the onions until it turns soft and translucent.

    • Now add the crumbled tofu and all the spices – onion powder, turmeric powder, salt, taco seasoning, black pepper powder, and nutritional yeast.

    • Mix well and cook for 7 to 8 minutes until the spices combine and the moisture evaporates.

    • As you cook, you will notice crust forming. Stir the tofu in between, and do not leave it unattended. Here is the tofu after cooking.

    • Adjust the salt and spices to taste. 
    • You can try this with firm or extra firm tofu. We liked the texture of scrambled tofu with firm/extra tofu more than the silken and soft ones.

    Ingredients

    Measurement Details: 1 cup=240ml; 1 tbsp=15ml; 1 tsp=5ml;

    • 1 tbsp oil
    • ½ cup onion chopped

    • 1 tsp taco seasoning optional (refer notes)

      I’ve been trying to eat a bit lighter in the mornings, and this was surprisingly filling. The tofu actually picks up all the spices so well. I wrapped mine in a warm tortilla with some avocado, and it was the perfect start to the day.

      Tofu scramble sounds delicious ! A burrito with it will make it into a complete healthy meal. In fact i feel its best for packing in lunchboxes.
