Today’s I am going to share a simple cookie recipe from China, to be exact it is the Chinese Butter Cookies. X is always a tricky alphabet in these A-Z blogging marathons. Last year I named my post with an ingredient starting with X which I used in my recipe. It was the vegan mango ice-cream. This year I am not going with the component name but the generic recipe name – Xiaodianxin. Xiaodianxin means cookies in Chinese.
After Gujiya, here is my second recipe from our India – Pav Buns or as the title says Whole Wheat Pav buns with vital wheat gluten. Homemade Pav buns were on my to-do list for quite a long time and what’s better than posting it during the blogging marathon? So here comes, whole wheat pav buns for the alphabet W.
If it was sheet cake yesterday, then it has to be cupcake today. :-) But instead of a cupcake, I am going to present you ramekins cake. Here is my single serving eggless upside down pineapple cake, prepared in ramekins. Again, I followed my sponge cake recipe went with the half the measure and this correctly yields four individual sized cakes.
For the alphabet S, I am going to present Snicker Doodle Cookies from Germany. I usually write down the recipe list for my entire mega marathon and the first one that I wrote was “S for Snicker Doodle Cookies.” This soft and chewy cinnamon flavored cookie is a treat for everyone. Even the non-sweet tooth person like me can gobble these cookies anytime, and I love this especially with milk. Ok, let’s blame it on the cinnamon. :-)
Today I am going to share one of the traditional cookies from Persia, precisely from Iran – Nan-E Nokhodchi | Persian Chick Pea Cookie with Cardamom and Pistachios. Chickpeas are popular in Persian cooking and this cookie is prepared with roasted chickpea flour. You know what, this is a vegan and gluten free cookie making it perfect for everyone. With the delicate flavors of cardamom and rose syrup and chick peas, this is sure a table winner.
I am going to share one of our favorite recipes today. It’s the Mandelbrot (in Yiddish) or Mandel Bread (in English) or Kamishbrot in Ukraine. The name might sound different, but it’s the nothing but simple almond bread. It is one of the famous Jewish cookies. In Yiddish, Mandel means almond and brot means bread. It’s twice baked bread, and the crunchier exterior makes it more similar to biscotti. Today I am going to share the Eggless version of the almond biscotti.
