    Rose Lassi with Lychee | Lychee Lassi

    Here is a super simple recipe for refreshing and delicious lassi with the floral and fruity flavors fresh lychee and rose syrup.

    Call it as lychee lassi or rose lassi with lychee; this Indian style yogurt smoothie is absolutely a crowd-pleaser, and it’s hard to resist with just one glass!

    I love fresh lychee, especially the floral flavors of it. :-) Lychee is a small round/oval fruit with pinkish/reddish edible flesh inside. Some call it as litchi or lichee, and you can find them in the Asian markets and groceries.

    The edible flesh contains the black seed inside. Both the seed and the skin are not edible. So we need to peel and deseed the lychee before consuming the fruit. Lychee is a good source of vitamin C, and you can find its nutrition profile on the HealthLine website.

    As much as I love them raw, I love to add them to my smoothies and lassi. I want to experiment with a few other recipes, but I couldn’t do it this year.

    I love floral and fruity flavors, and I have already shared quite a few rose-flavored recipes like paneer soda, rose syrup popsicle, watermelon roohafza popsicle, and rose syrup jello. Now adding one more to the list – rose lassi with lychee. The combination of rose syrup and lychee is heavenly, and it’s a must-try combination for sure.

    The lychee lassi recipe is very straight-forward. We blend the lychee, yogurt along with some water and rose syrup. I added some extra sugar, as my lychees weren’t sweet enough. But you can always adjust it according to your preference. Blend them all, and that’s it. The lassi is ready! I love to serve some lassi as part of my paratha thali.     Rose Syrup Alternative-

    Instead of rose syrup, you can add rose water or rose essence. A ¼ tsp of rose essence or 2 tsps of rose water should be sufficient but differ with the brand. So adjust it accordingly. If you are using rose essence or rose water, you might have to add pink food color, but that’s completely optional.

    Now without any further ado, let’s see how to make this rose lassi with lychee.

    Rose lychee lassi recipe

    • Peel and deseed the lychee and cut the edible flesh part roughly. I got about 100 grams of lychee.
    • In a blender, add the lychee, sugar, yogurt, water, and 1 tbsp of rose syrup.
    • Blend it thoroughly. I used my Blendtec and used the smoothie setting.
    • Now check the consistency and, if required, add more water and pulse it again. 
    • Drizzle some rose syrup and serve right away.

    Recipe Notes-

    • I usually don’t add any ice cubes. But you can add ice-cubes if you prefer your lassi cold.
    • The rose syrup tends to get settled in the bottom as the lassi stays for a longer time. Make sure to mix the lassi well before serving. 
    • Add sugar or sweeteners of your choice if required.
    • You can use any plant-based yogurt of your choice and make this a vegan lassi. 
    • Instead of rose syrup, you can add rose water or rose essence. A ¼ tsp of rose essence or 2 tsps of rose water should be sufficient but differ with the brand.

    • ½ cup water
