    What is sweet potato pone

    The third recipe that I am going to post under the theme “Latin American Cuisine” is the Sweet Potato Pone which is also popularly known as Potato Pound of Belize. It is a traditional dessert of Belize(formerly known as British Honduras). Once you have grated sweet potatoes ready, you can whip this dish in no time. This party pleaser is a vegan dessert, perfect for all vegetarians and vegans.

    This dish is very similar to bread pudding. Instead of bread, we are using grated sweet potatoes. The original recipe calls for coconut milk, but as I used all my coconut milk for the Brazilian curry I went with the almond milk that I had in stock.  Even though it’s summer, the cinnamon and brown sugar flavor bought the fall weather back in my kitchen.

    Ingredients

    Sweet potatoes: We need grated sweet potatoes. Wash them and peel the skin and grate the sweet potatoes using a box grater or food processor . There are different varieties of sweet potatoes, and I used the mild-yellow ones. 

    Almond milk – the original recipe calls for coconut milk, but I went with almond milk. Use any dairy-free milk of your choice.

    Sugar: Use cane sugar /brown sugar, which certainly enhances the flavor. You can also use coconut sugar instead. I haven’t tested this recipe with maple syrup or any other sweeteners.

    Spices and flavors: We need ginger powder, cinnamon powder, and vanilla essence.

    We also add raisins, and we need some vegan butter/oil/spray.

    Dietary specifications

    This sweet potato pudding is a vegan, gluten-free and dairy-free recipe. Skip almond milk and use coconut milk or soy milk for a nut-free version.

    Without any further ado, here is the recipe.

    How to make vegan sweet potato pudding

    Prep-work

    • Wash, peel and grate sweet potatoes.
    • Grease a 9X13 rectangular bakeware with oil.
    • Preheat the oven to 450 deg F.

    Procedure

    • In a large bowl, combine sweet potatoes, ginger, raisins, cinnamon, sugar, and vanilla.

    • Add milk and Margarine; stirring to incorporate throughout the mixture.

    • Pour this mixture into bakeware dish. Bake on the bottom shelf of your oven for 30 minutes.

    • Then, lower oven temperature to 350. Move the mix to top shelf.
    • Bake for one more hour until top is brown.

    That’s it. Sweet potato pone is ready.

    Recipe notes

    • Instead of oil, you can use vegan margarine or butter.
    • I made this recipe as a vegan one, but you can replace almond milk with regular milk and also use regular butter.
    • You can replace almond milk with either coconut milk, cashew milk or soy milk.
    • Depending on the sweetness of the potatoes, adjust the sugar.

    • 6 cups Grated Sweet Potatoes
    • ¾ cup Raisins
    • 1.5 cups Cane Sugar
    • ½ tsp Ginger Powder
    • 1 tsp Cinnamon Powder
    • 3 cups Almond milk
    • 2 tsps Vanilla
    • Oil / Cooking Spray / Vegan Butter / Margarine  – 1 tsp + 2 tbsp

    Instructions

      we also make pone in the Caribbean – with sweet potato, pumpkin or cassava but our is firmer – able to be sliced. Regardless I am sure this version would be just as delicious

      I was going to make this pone for the Latin American cuisine but hubby retaliated that he didn’t want anything sweet. So had to change track. However, now you have tempted me to try it out at some point.
