Vegan Sweet Potato Pone or Sweet Potato Pudding is a simple vegan baked pudding prepared with grated sweet potatoes, sugar and almond milk.
Vegan Sweet Potato Pudding
The third recipe that I am going to post under the theme “Latin American Cuisine” is the Sweet Potato Pone which is also popularly known as Potato Pound of Belize. It is a traditional dessert of Belize(formerly known as British Honduras). Once you have grated sweet potatoes ready, you can whip this dish in no time. This party pleaser is a vegan dessert, making it perfect for all the vegetarians and vegans.
I was a bit skeptical if I should try a dessert or go with yet another main course dish from Central America. We still haven’t recovered from April month baking. But what made to go ahead with this recipe?. I know I would try the spicy curries later, but given the fact that I am not a sweet tooth person and if I miss the dessert now, I know for sure I would take me a long time to get back to it. So I went with this dessert.
Combo Made in Heaven
The other reason why I couldn’t let go of this recipe is that one tsp of CINNAMON. The blog needs no intro about my cinnamon love. No, I am not exaggerating. IMO, Cinnamon and sugar is a combo made in heaven. Be it apple betty or snickerdoodle or my breakfast oats; I just love that cinnamon flavor. :-)
Sweet Potato Pone
This dish is very similar to bread pudding. Instead of bread, we are using grated sweet potatoes. The original recipe calls for coconut milk, but as I used all my coconut milk for the Brazilian curry I went with the almond milk that I had in stock. Even though it’s summer, the cinnamon and brown sugar flavor bought the fall weather back in my kitchen.
So how to prepare this pone? Grease the baking tray. Grate the sweet potatoes and combine with other ingredients and bake. Viola, pone is ready. It’s as simple as that. As I prepared a large batch of this pone, I took it to work too. Everyone liked it, and few of my colleagues asked for the recipe right away. That explains it all right?
Without any further ado, here is the recipe.
Vegan Sweet Potato Pone – Sweet Potato Pudding Recipe
Ingredients:
- Grated Sweet Potatoes – 6 cups
- Raisins – 3/4 cup
- Cane Sugar – 1.5 cups
- Ginger Powder – 1/2 tsp
- Cinnamon Powder – 1 tsp
- Almond milk – 3 cups
- Vanilla – 2 tsps
- Oil / Cooking Spray / Vegan Butter / Margarine- 1 tsp + 2 tbsp
Prep – Work:
- Wash, peel and grate sweet potatoes.
- Grease a 9X13 rectangular bakeware with oil.
- Preheat the oven to 450 deg F.
Steps:
- In a large bowl, combine sweet potatoes, ginger, raisins, cinnamon, sugar, and vanilla.
- Combine them well.
- Add milk and Margarine; stirring to incorporate throughout the mixture.
- Pour this mixture into bakeware dish.
- Bake on the bottom shelf of your oven for 30 minutes.
- Then, lower oven temperature to 350.
- Move the mix to top shelf.
- Cook for an additional hour until top is brown.
That’s it. Sweet potato pone is ready.
Notes:
- Instead of oil, you can use vegan margarine or butter.
- I made this recipe as a vegan one, but you can replace almond milk with regular milk and also use regular butter.
- You can replace almond milk with either coconut milk, cashew milk or soy milk.
- Depending on the sweetness of the potatoes, adjust the sugar.
