Hakka noodles and chow mein are famous noodles recipes that everyone raves about, and you can find these in most restaurant menus as well. I always wonder what the difference between these two noodles is. If you ask my son, he will say Hakka Noodles is either white or mild red, whereas chow mein is bright red. Yes, we still color-code all our food.

I know that’s not the exact explanation and instead of me explaining it, let me share the link that explains well about the difference between the Hakka noodles and chow mein. As they mention, both are open-ended dishes, which means, the sky is the limit. You can create a zillion recipes with these noodle varieties.

Veg Hakka Noodles made for the lunch box

Like fried rice, you can serve this with a dry or gravy Manchurian side or any other spicy curry. But as my soon loves his Hakka noodles with ketchup, I usually skip the side dish and serve it with ketchup.

Also, I use both sesame and peanut oil for this Hakka noodles preparation, and it adds that restaurant-style flavor.

The version that I am sharing here is a mild one, (kid-friendly) with minimal ingredients. You don’t exotic ingredients. I have made it with readily available sauces and simple ingredients.

Now let’s hop on and learn how to make this veg Hakka Noodles.

How to Make Hakka Noodles recipe

A favorite Indo-Chinese fusion noodles recipe prepared in Hakka style with veggies and sauces.

Hakka Noodles served with some greens and a bit of ketchup - perfect lunch box

    Ingredients required

    • Hakka Noodles – 2 packets (I used two 5.3 oz pack)
    • Garlic Cloves – 2
    • Green Onions – 4
    • Mixed Vegetables – 1 cup (I used cabbage, carrot, beans and bell peppers)
    • Low Sodium Soy Sauce – 1 tbsp
    • Rice Vinegar – 1 tsp
    • Green Chili – 2
    • Sweet Chili Sauce – ½ tsp (optional)
    • Salt – 1 tsp
    • Water for cooking the noodles
    • Peanut Oil – 2 tsp + ½ tsp
    • Sesame Oil – 1 tsp

    Prep-Work

    • I usually follow the instruction mentioned in the noodles packet for cooking it.
    • Bring about 1 quart of water to boil. Add a pinch of salt and ½ tsp of peanut oil.
    • Add the noodles and let it cook for 3 to 4 minutes. Turn off the heat and drain the water. Immediately run it through cold water to stop cooking. Set this aside. (Pro-tip – add some oil and spread it in a wide plate so that the noodles doesn’t clump together)
    • Cut all the vegetables and set aside.

    Procedure

    • Heat a pan or wok and add the two tsps of peanut oil. When the oil is hot, add the chopped garlic and let it turn slightly brown.
Adding chopped garlic and letting it simmer
    • Then add the green onions and green chilies and cook for a couple of minutes.

    • Next, add the vegetable juliennes and salt. Mix and saute it over a high flame for two minutes.
    Adding vegetable juliennes and salt
    • After that, add the soy sauce, vinegar, and sweet chili sauce and let the veggies cook for two more minutes.
Adding soy sauce, vinegar and sweet chili sauce
    • Now add the cooked noodles and one tsp of sesame oil and toss the noodles if possible or gently fold them in.
    Adding the cooked noodles
    • Let it cook for two more minutes, and that’s it. Veg Hakka noodles are ready.

Serve it hot with your favorite gravy or ketchup.

    Recipe notes

    • Make sure you cook the noodles aldente.
    • Adjust the salt, spices, and sauces as per your preference.
    • Do not add more than ½ cup of vegetables for one pack of noodles.
    • Adding both sesame and peanut oil gives nice flavor but you can opt for either one. But as I mentioned in fried rice, I would prefer an oil with a high smoke point.

    Frequently asked questions

What are Hakka noodles made of?

They are typically prepared with wheat. You can also find rice-based or buckwheat-based ones, but I opt for the egg-free wheat-based noodles for this particular veg Hakka noodles recipe.

What is the difference between noodles and Hakka noodles?

Noodles are the food group that is prepared with unleavened dough. You can find rice noodles, wheat noodles, buckwheat noodles, and more in different shapes. Hakka noodles refer to the style of preparation of noodles by the Hakka Chinese. (You can refer to this link here)

    Are Hakka noodles healthy?

These wheat noodles are rich in carbs. If you are following a low-carb diet, you may want to limit your intake or use low-card high-protein noodles. If you have gluten allergies, opt for gluten-free rice noodles. When it comes to carb-loaded food, moderation is the key.

kiddos will be super excited if i pack them noodles for their dabba, but however i have the doubt whether they will stay fresh after 4-5 hours!
The dabba looks very colorful, with those beautiuflly cut veggies and noodles, makes it more inviting!!! Super hit dabba with kids!!

I’ve successfully converted my kids to noodle lovers recently. They love this veggie Hakka noodles, I cheat and use store bought cole slaw mix – I get lazy sometimes to chop veggies ;-) add some Manchuria to this and you have a yummy filling meal.

Such a delicious looking lunch box Srividhya! In my kids school , they are not allowed to take noodles in their lunch box. What they mean is the maggi type noodles but the kids prefer not to take even these kinds! They love to have this for dinner where they can enjoy the meal leisurely.
