    No Bake Eggless Mango Cheesecake with Agar Agar

    Following the concept No bake dessert, here is my next recipe – No Bake Eggless Mango Cheesecake with Agar Agar. This recipe is prepared with the king of the fruits – mango and cream cheese and milk and sugar. As usual I am using Agar Agar for setting the cheesecake layer. Yes, it’s a layered dessert and here is my Single Serving two layered No Bake Mango Cheesecake.

    Single Serving Cheesecake

    I love these single serving desserts. Portion control is the key for healthy and balanced diet. IMO, these single serving desserts or the single shot glass desserts is one way to prevent us from binge eating.  I adapted this recipe from here, but went only with two layers. I am preparing this as two layered cheesecake but you can simple mango cream or any other frosting as third layer too

    Layer 1 – Graham Cracker Layer

    For my pumpkin pie, I went with the good day biscuits but for this recipe I went with the graham crackers. So what are graham crackers? – These crackers are prepared with graham flour; a combination of finely-ground unbleached-wheat flour with the wheat bran and germ coarsely-ground and added back in providing flavor. (Quoted from Wiki). I used the organic whole wheat graham crackers with honey. I didn’t add any additional sugar or honey as the crackers were super sweet. So for this layer all you need is butter and these biscuits.

    Layer 2 – Mango Cheesecake

    For the second layer, you need mango puree (store bought or fresh ones), cream cheese, milk, sugar, condensed milk, water and agar agar. Basically you need to whisk all these ingredients (except water and agar agar) and add the agar agar mix and pour on top the graham cracker layer and let it set.  Super simple huh?

    So without any further delay here is no bake eggless mango cheesecake.

    No Bake Eggless Mango Cheesecake with Agar Agar Recipe

    Ingredients:

    • Mango – 2 (I got 1.5 cups of mango puree)
    • Graham crackers- 1 pack or approx 3.5 cups of broken crackers (I used 7.5 oz /213 g Horizon snack grahams packet)
    • Room Temperature Butter – 3 tbsps
    • Sugar – 3 tbsps
    • Condensed Milk – 3 tbsps
    • Milk – ½ cup
    • Crème Cheese – 8 oz pack
    • Water – ½ cup
    • Agar Agar Powder – 1.5 tsps

    Prep – Work:

    • Wash and peel the mango skin and chop the pulp roughly and puree them.
    • Make sure the butter and milk is in room temperature.
    • If you are using original graham crackers break the biscuits into small pieces.

    Layer 1:

    • In blender dry grind the graham crackers coarsely. Then add the butter and pulse them so that the butter and the crackers mixed well. Now add about 2 tbsps of this mix in the dessert glass and press them tightly and evenly.
    • Let it sit in the refrigerator for about 30 minutes

    Layer 2:

    Note: Preparing the agar agar solution and mango cheese mix can be done in parallel.

    • Heat ½ cup of water and once its start to boil add the agar agar powder and let it dissolve well. Keep stirring so that it doesn’t form a deposit in the bottom.
    • Once it is dissolved turn off the heat.
    • Add the cream cheese, milk, sugar and condensed milk to a wide pan and whisk with hand mixer or with regular hand whisk.
    • Now add the mango puree and mix again. Check for sugar and if required add more sugar at this stage.
    • Mix again and finally add the agar agar solution and mix well.
    • Now pour this mix evenly on top of the graham cracker layer in the dessert glass and let it refrigerate until its set.

    • Decorate with chopped mangoes or mint or other berries and serve chilled.

    Notes:

    • If you are using unsweetened crackers, add honey or sugar while grinding them.
    • Condensed milk is optional and can be replacing by sugar.
    • Adjust sugar according to the mango sweetness.
    • Instead of milk, fresh cream or evaporated milk can be used too.

      Wow, truly great way to enjoy..The best thing I loved about these small cute glasses is that they are not only looking super awesome, but you’ve also taken good care in base selection and made it very healthy. Selection of graham crackers .- which is an excellent combination of finely-ground unbleached-wheat flour with the wheat bran is a good thought. Excellent healthy share dear Vidhya.
