Quick, easy, and healthy mushroom toast recipe! A perfect mushroom recipe that you can relish for any meal!
After overnight chocolate oats, the next recipe in my breakfast series is the creamy mushroom toast! We love mushrooms, and I always have a pack of mushrooms to make a quick stir fry on busy weekdays or add it along with other veggies in curries or pulao for that added protein.

So what’s mushroom toast? It’s a classic British dish where we saute the mushrooms with some herbs and spices and serve it on a toast. I am not claiming my mushroom toast as that classic or authentic dish. I am sharing my way of making it.
This mushroom toast is so easy to make, and it doesn’t involve much chopping making it perfect for breakfast even though you can enjoy this toast for any meal. We all love this mushroom toast, and you can customize it easily to your preference.
I have shared the recipe procedure exactly how I make it for my son during weekday mornings. I take some shortcuts, but please check the variations and recipe notes.
Let’s get straight into the ingredients, variations, and procedure.
Ingredients required
Mushrooms: I have used white mushrooms for this toast. You can use brown bella or portobello mushrooms too. Slice the mushrooms roughly; no need to chop them finely.
Spices: I have used onion powder, garlic powder, salt, chipotle chili flakes, Italian seasoning, and salt. You might all wonder why to combine chipotle chili flakes and Italian seasoning. But it works well :-) Do try it. You can skip Italian seasoning and add dried oregano or skip the chipotle chili flakes and used ground pepper. You can create other variations of this mushroom toast by combining different spices and herbs.
A note about salt: Check if the other seasonings like onion powder and garlic powder contain salt. If so, adjust accordingly.
Bread: I have used thinly sliced Dave’s killer bread. You can use bread of your choice and toast it.
Cheese is optional; I usually add it when making it for the kiddo. Pepper jack or cheddar works well. Alternatively, you can add cream cheese or ricotta too. In that case, no need to microwave after adding the sauteed mushrooms.
Variations
Each variation of this mushroom toast is a recipe on its own. But here are a few,
- You add some guacamole or just smashed avocado instead of cheese, and then add the mushrooms for avocado mushroom toast.
- Add freshly sliced figs and a generous drizzle of balsamic glaze for a sweeter version. I will share that version soon.
- Along with mushrooms, you can add some grated carrots and spinach and make the toast too.
- Caramelized onions add a nice flavor to this toast. If time is not pressing, you can caramelize the onions, set them aside, and then saute the mushrooms.
Dietary specifications
It’s a nut-free, vegetarian toast. Skip cheese for a vegan version, and make sure to sure gluten-free bread and spices for a gluten-free option. Mushroom toasts are best when served warm. You can saute the mushrooms ahead and serve it with bread when needed as part of meal prep. I haven’t experimented with storing sauteed mushrooms for a long time, so I can’t talk about that much.
How to make mushroom toast
- Heat a pan or skillet and add the olive oil. When the oil is hot, add the mushrooms, salt, onion powder, garlic powder.
- Mix well and let the mushrooms wilt a bit. Then add the chipotle chili flakes.
- Cook the mushrooms until there is no moisture. (The whole process takes about 5 to 6 minutes over medium heat). Set these mushrooms aside.
- Toast the bread in your preferred way. I used my toaster. Place the cheese slice on top of the bread.
- Now add the required amount of the cooked mushroom. I add about 2 tbsps.
- Microwave this for 20 to 30 seconds or until the cheese melts. Serve immediately.
Recipe notes
- Adjust the salt and spices to taste. Instead of red chili flakes, you can use ground pepper.
- Skip cheese for a vegan version.
- Instead of cheese slices, you can also use cream cheese or ricotta cheese. We like cheddar or pepper jack cheese slice for this mushroom toast.
- Instead of cheese, you can add mashed avocado or guacamole, top it up with mushrooms, and make a mushroom avocado toast.
- You can also toast the bread on the pan, add the cheese slice, and warm the bread until the cheese melts. I find toaster and microwaving convenient, especially in the mornings, so I opt for that.

Measurement Details: 1 cup = 240ml; 1 tbsp = 15ml; 1 tsp = 5ml;

Even I love mushrooms and make a bruschetta.. Process is similar but I finish off in the oven and it is usually for snack or light dinner. This time I made toast and microwaved for 2-3 minutes to melt the cheese. Now I have one more to add to my breakfast menu or even a hot snack menu! Thanks for sharing.
