    Veg Pulao Platter | Easy Lunch Menu Ideas

    A simple veg pulao platter served with raita, matar paneer, and some zucchini and brinjal fritters/bajji, and that’s what I am sharing today. A perfect lunch/brunch menu!

    Earlier I shared a simple millet biryani platter, and today it’s going to be a pulao/pulav platter. Of all the platters, this is kiddo’s favorite one because of the paneer dish. :-)

    I always plan my weekday menus, but I don’t plan anything for weekends and take it as it comes. The weekend before lockdown and after lockdown is different. Before the lockdown, playdates, birthday parties, meeting friends, small get-togethers, potlucks were part and parcel of our weekend schedule. But I make sure to make one meal with all our favorite dishes, and we relax and enjoy it!

    The weekends after the pandemic are all the same now, and with all the social restrictions relishing simple homecooked meals has become our favorite past time. 

    This platter of mine is something we all love. As I mentioned in my biryani platter, I make a gravy for all my pulao and biryani to have it with roti for the next meal. Guess what, I make this very same platter but include roti and a sweet when friends come over. It’s easy to customize and compose the Indian thali, and it’s not as difficult as you think.

    The pulao platter-

    In today’s platter, I have simple vegetable pulao made in Instant Pot with cucumber raita, matar paneer, and zucchini bajji. Except for the zucchini bajji, I have all the other recipes on the blog. Due to the salmonella outbreak at that time, I ended up making cucumber raita again. 

    How to customize the platter-

    Depending upon the time and situation, I make either a dessert or a fried item. I did not have any fried dish in the millet biryani platter, but I had a dessert. In today’s platter, no dessert but a fried goodie. Instead of bajji, you can make pakoras or any other chaat items. 

    You can skip the fried item and the dessert entirely and make a simple dal or a dry curry and make a loaded veggie platter. The options are endless, and you can plan the menu as per your likings.

      This is my platter Vidhya. Absolutely love this. Even I will eat biryani/Pulao without any side dishes too. This is such simple and soulful meal.

      You are right it is easy to customize. I do the same, and it helps you save some time and at times cook less at times. Loved this veg pulao platter.

      A simple and comforting weekend meal. I would be happy with just cucumber raita and pulao. Zucchini bajji sounds interesting. Shall make it sometime.

      Wow , that’s a wonderful meal . A simple pulao with mattar paneer is just my kind of meal . I love cucumbers and they taste amazing in raitas .
      And who can say no to bhajiyas – i make from lauki so I assume the zucchini ones to be similar to those .
