    Single-Serve Eggless Coffee Cake | Mug Coffee Cake

    Are you craving for coffee cake but didn’t want to bake a big one? I have a perfect, easy-to-make, soft, and delicious single-serve microwave eggless coffee cake.

    Learn how to make this delicious coffee cake with a handful of ingredients in a microwave!

    After apple crisp, I am back with another microwave dessert, and it’s the kiddo’s favorite coffee cake this time. 

    I love baking; there is no doubt about it. But at times, when kiddo (and us too) craves for quick desserts, I resort to these microwave cakes. I know these are popularly known as mug cakes, but I always use ramekins for baking them. 

    What’s a coffee cake?

    A cake without frosting/icing but with a crumble served as an accompaniment to a coffee is a coffee cake. Coffee cakes are quite popular, and they are easily available too. Kiddo loves the Starbucks coffee cake with that cinnamon flavor. We all love it, too, especially that sugary crumble. :-)

    No coffee in coffee cake

    Modern coffee cakes rarely contain coffee. Even though you can find some coffee cake recipes contain coffee, most of the coffee cakes don’t call for coffee. As they are served along with coffee, these cakes are popularly known as a coffee cake. If you are curious to learn more about these cakes, check out this link. 

    You can serve this coffee cake along with your breakfast coffee or serve it as a dessert or a snack. You can also pair these coffee cakes with any meal, and you can’t just say no to these cakes. Seriously, they are irresistible, if you are conscious about calories, these mug cakes are perfect for that portion control.

    My coffee cake

    Like my other cakes, this one is also eggless, and you can make it vegan by using dairy-free milk. 

    I can’t imagine my coffee cake without cinnamon and a crumbly streusel topping. So what’s streusel topping – it’s a crumbly topping made with butter, flour, sugar, spices. And we add it to the cake batter before baking. Streusel is a German word meaning to sprinkle. The crisp topping that we made for apple crisp is also a kind of streusel. 

    For this microwave cake version, I did not make the traditional streusel with butter, flour, etc. I came across this recipe where they sprinkled sugar and cinnamon on top. But I added the cinnamon with the cake batter, and I just sprinkled brown sugar on top of the cake, and it worked perfectly fine. 

    I used raw granulated sugar for the cake batter and light/dark brown sugar for the topping. Brown sugar enhances the flavor for sure, and I highly recommend brown sugar for the topping.

    We were surprised to find the cake’s taste profile very close to what you get in Starbucks. I did not include any nuts but add some crushed pecans or walnuts for that crunch. 

    Now without further ado, let me share how I made this coffee cake with step-wise pictures in the microwave.

    How to make eggless single-serve microwave coffee cake

    • First, in a ramekin, add the dry ingredients – all-purpose flour, sugar, ground cinnamon, and baking powder.

    • Then add the milk and oil.

    • Mix well without any lumps. There shouldn’t be any dry flour.

    • Now sprinkle ½ tbsp of sugar on top like below.

    • Microwave this for 60 seconds / 1 minute or until the cake is done. It should not take more than 90 seconds. I microwaved one cake at a time. Let it cool for 1 to 2 minutes and enjoy right away! Please refer to notes for more details.

    Recipe Notes

    • The cooking time might vary depending upon your microwave power setting. Test the cake for doneness by inserting the toothpick, and it should come out clean without wet batter. It’s ok if the toothpick comes out clean or with a few crumbs clinging to it.
    • I tested this recipe in my 900W microwave, and 60 seconds worked perfectly. 
    • I highly recommend ceramic mugs or ramekins for the microwave cakes. Make sure there is sufficient space for the cake to rise. 
    • I used two types of sugar for this recipe. But you can use light or dark sugar for both cake and the topping. Again I strongly suggest using light or dark brown sugar topping for the coffee cake, which gives this streusel topping feel. 
    • Microwave cakes are best when enjoyed fresh. 
    • I kept it nut-free, but you can add ½ tbsp of nuts or top it up with candied nuts.

    Ingredients

    The below measure makes one mug cake. I doubled it and made it in two ramekins.

    Measurement Details: 1 cup=240ml; 1 tbsp=15ml; 1tsp=5ml;

    For the cake

    • 2 tbsp all-purpose flour
    • 1.5 tbsp sugar raw sugar, or regular white sugar
    • ¼ tsp ground cinnamon
    • ¼ tsp baking powder
    • 2 tbsp milk
    • 1 tbsp oil

    For the topping

    • ½ tbsp brown sugar light or dark

    Instructions

      Nailed it!!! I tried the mug cake recipes twice or thrice earlier but they didn’t work well.. But this recipe was soo easy n perfect… Thanks a lottt.. Will try other recipes too…
