    Cake Pops Using 1 Minute Microwave Eggless Cakes

    Here is a simple cake pops prepared from the microwave eggless vanilla cake. The single serving microwave eggless cakes are very easy to prepare and you can prepare these any time. The cake pops are prepared by crumbling these microwave cake pops and making into small balls and coating them with your favorite frosting. This might seem like a big process but its super simple and it can be done in a jiffy. It does take some time for setting though. ;-)

    Vaandu loves cake pops. Whenever we go to Starbucks, he gets these yummylicious cake pops. During Holi, the first one that came into my mind were these cake pops. I thought of trying colorful cake pops to go with Holi. I wanted to keep the process simple and also I wanted the recipe to be easy enough so that parents and kids can have fun time preparing these little cuties. So I went with my 1 minute microwave eggless vanilla cake as the base. All you need is, two servings of those cakes and some whipping cream for the outer coating.

    For this recipe, I went with artificial food color. I just used a drop of few colors but you can replace it completely with natural fruit flavors or with rose essence or instead of whipping cream, you can melt chocolate and use that as outer layer.  I didn’t intend to add all the colors. I wanted different and unique colors for my cake pop. But Vaandu, who was helping me with this recipe, didn’t want it that way. (I exclusively prepared this for him, so I decided to go in his way) He wanted to experiment with the colors. So we combined all the colors and got this khaki brown color. As cold whipping cream is easy to handle for Vaandu, I went with that instead of melting chocolates. Have fun preparing this with your little ones in your own way.

    So here is the simple recipe that I tried. Do let me know your variations too. :-)

    Step 1: Preparing the egg less microwave cakes. (1 minute cakes)

    Step 2: Preparing the cake Pops:

    Ingredients:

    • Two microwave eggless 1 minute cake
    • Your choice of frosting – 1 cup + 1 tbsp (I went with store-bought whipped cream frosting)
    • Food colors of your choice – 2 to 3 drops.
    • Confetti’s or colored sugar crystal for decoration.
    • Tooth picks or cake pop sticks.

    Steps:

    • Now crumble the cake that you prepared as mentioned above.

    • Add one 1 tbsp of the frosting and mix well. This acts as the binding agent. You can also use butter.
    • Now insert the cake pop sticks or tooth picks and keep it in the freezer for 30 minutes for the pops to set.

    • Meanwhile mix the color in the frosting. This step is completely optional as plain frosting can be a perfect coating too. But kids will have fun so add a few drops of food color. We added one drop of Red, Yellow, Orange, Cyan and Green to get this Khakhi color.

    • After 30 minutes, remove the cake pops and slow apply this frosting using a spoon (or even your hand) and smoothen it. Kids will enjoy this process. You have to be careful while applying this. If the cake pops are not set there is a good change for it to break.

    Afterdipping

    • After applying the frosting, decorate it confetti’s and refrigerate it for 1 hr.
    • That’s it. Yummy cake pops are ready.

    • Instead of frosting you can melt either white chocolate chips or semi-sweet dark chocolate chips and dip the cake pops in that too.
    • Food colors can be replaced with fruit juices.
    • Make sure you keep the cake pops for at least 30 minutes in freezer. After taking out, if it’s not stiff, set it again for 15 more minutes.
    • Butter can be used as a binding agent while crumbling and mixing the cake.
