    I wish you all a very happy and prosperous new year. Before getting into the recipe, I would like to thank all my readers for the immense support and motivation to share new recipes. Hoping to post a lot of new recipes and also meal planning and preparation in 2019. So stay tuned.

    Rotimatic Recipes

    Now coming to Rotimatic recipes, I know it’s been a while since I posted any new Rotimatic recipes. I have been experimenting with bajra flour (yes, I got the update) and also with a mix of gluten and gluten-free flours. You will be seeing some exciting recipes in the coming months. One thing for sure, I love Rotimatic so much, and I am using it every single day be it for my roti or poori or pizza. :-)

    Paal Poli | Sweetened Milk Poori

    Paal poli is one of the traditional sweet recipes that we make during Bhogi and also during Avani Avittam. We either make this milk poori or jeera poori or the regular poli/obbattu. I thought of sharing this paal poli first before the other two. The recipe is very straightforward. All you need to do is make some pooris with all-purpose flour or maida and fold into a semi-circle or triangle. Then dip that in sweet milk flavored with saffron or elaichi and serve it with some powdered sugar drizzled on top. That’s it. Not so complicated right?

    This recipe makes me all nostalgic. I used to feed poori and roti with milk and sugar when the kiddo was young. The kiddo likes the milk soaked poori and roti. These days if we have leftover pooris or rotis, we dip it in milk along with sugar and relish it.

    Purimatic Settings:

    I went with King Arthur APF, and coarse semolina for preparing this poori and here is the setting that I used,

    • Recipe: Puri
    • Flour: Aashirvaad Select (you can pick any)
    • Thickness: 1
    • Roast: 1
    • Oil: 1

    PS: The below flour measurement, yields up to 10 pooris but the milk mixture is only for 3 pooris. You can triple the milk mixture ingredients for 10 pooris.

    Now without any further ado, here is the paal poli recipe,

    Ingredients:

    • For Poori:
    • All-purpose flour – 2 cups
    • Semolina / Rava – 1 cup
    • Salt – ⅛ tsp
    • Water – as required to fill the water container of rotimatic
    • Oil – 2 cups (for frying and as needed to fill the oil container of rotimatic (rotimatic use less than ¼tsp of oil for each puri))
    • For the Milk Mixture:
    • Milk – 1 cup
    • Sweet Condensed Milk – 3 tbsp
    • Saffron Strands – ¼ tsp + to garnish
    • Chopped Nuts – 3 tbsps or as required
    • Powdered Sugar – ¼ cup

    Steps:

    • Preparing the Milk Mixture:
    • In a microwave-safe bowl add the milk and sweetened condensed milk and heat it for 2 minutes.

    • Then add few saffron strands and mix well. Set this milk mixture aside.
    • Preparing the Poori:
    • In a wide bowl, add the APF and semolina.

    • Mix it thoroughly.
    • Transfer it to the flour container of rotimatic.

    • Add the salt to the water container and ensure the salt is well dissolved.
    • Now start the rotimatic and select the puri option and the flour. I used Aashirvaad Select.
    • Select your thickness, roast level, and oil. I kept everything to the minimum. You can see the setting level above.
      Select the count and let the rotimatic do its magic.
    • Meanwhile, you can heat the oil for frying.
    • As purimatic pushes the pressed poori, you can fry them right away if not store them in a covered casserole and fry when required.
    • After frying the poori, press the puffed poori right away and drain the excess water and fold them into a semi-circle or triangle. Make sure the pooris are not super crunchy.

    • Assembling the Paal Poli:

    • Add the milk mixture to the poori half an hour to one hour before serving. We don’t want over soaked pooris, so adding the milk 30 to 60 minutes before is sufficient.
    • Sprinkle some chopped nuts, powdered sugar and serve hot or cold.

    Recipe Notes:

    • I went with saffron flavored milk. You can add any flavors of your choice.
    • Instead of sweetened condensed milk, you can add sugar. Sweetened condensed milk adds richness to this dish.
    • You can knead, press and traditionally fry the pooris too.
    • Usually, we use APF for this recipe, but if you are conscious about calories, you can opt for whole wheat flour or use half and half of whole wheat flour and APF.
