    Crispy, healthy, gluten-free, and eggless zucchini fries made in air-fryer. This zucchini fries with minimal ingredients, and oil is a guilt-free munch for sure!

    I am back with another zucchini recipe after thepla. And this time, it is this vegan and low-carb zucchini fries. We have been trying this zucchini fries and one more zucchini recipe(shhh, it’s a secret) with different variations, and guess what, every time it came out well, and I was so confused on which one to post, ie, which variation to share on the blog. Finally, I decided to share the simple one.

    Eggless & Gluten-Free Zucchini Fries-

    Most of the zucchini fries recipe that you find online has egg as the binding ingredient. I know I can make it without eggs, like how I did my fried cheese. I wanted to use the zucchini’s water content as the binding agent. So I combined salt and zucchini and let zucchini ooze out some water. 

    Then I tossed them in almond flour and corn starch mixture, and that worked. I did not use any cheese or panko bread crumbs; instead, I used almond flour and corn starch, making these fries wholly vegan and gluten-free. 

    Can I bake the fries instead of using an air-fryer?

    Yes, you can very well bake them. Let me be honest here. I tested this recipe only with the air-fryer, so I went ahead and used the “Air Fryer Cooking Time Calculator” to find the timing. I use this a lot to convert the oven timing to the air fryer. You can use this as a reference value and adjust accordingly.

    So for this zucchini fries, if you are using a conventional oven, you can bake at 425 deg F for 15 minutes, tossing them half-way through. I would keep an eye after 12 minutes and remove it from the oven at the desired stage. I hope this helps.

    Oil-

    I used approximately 1 tbsp of oil for these fries. I brushed the zucchini fries after they were cooked half-way through. But for a crispier fries, you can add a little extra. Also, you can drizzle some oil to the zucchini slices before tossing them in the flour mixture.

    Zucchini Fries Variation-

    If you don’t have any dietary restrictions, you can use panko bread crumbs instead of almond flour and use parmesan cheese. 

    I used red chili powder here; you can use other spices of your choice like cajun seasoning, chipotle chili, or skip the chili and use pepper and dried herbs. You can season it as per your preference. 

    Now that I have shared all the details let’s get straight into the recipe. 

    How to make zucchini fries in the air fryer:

    Prep the Zucchini Fries-

    • Cut the zucchini into ¼ to ½ inch thick stick/fries/slices. Add the 1 tsp of salt and mix well. The salt will ooze out water, and that will help the flour to stick on the zucchini.
    • In a mixing bowl or plate, combine the almond flour, corn starch, and red chili powder. Mix well and set aside. 
    • Add the salted zucchini fries to the flour mixture, and toss until coated. Place them into the air fryer tray. Repeat the same for the slices.

    Air-Fry in batches-

    • Preheat your air fryer as per the manual instructions. Now air-fry the zucchini at 400 deg F for 5 minutes. After 5 minutes, take out the tray and shake the fries. Brush them with some oil and air-fry again for 400 deg F for 5 minutes. We have to air-fry for 10 to 12 minutes, shaking the fries between and brushing them with some oil.

    • I had to work in two batches. After both the batches are done, I placed all the fries in the tray and set the air fryer at 400 deg F for just 2 minutes for a crispier version.

    • And that’s it. Serve it with your favorite dipping sauce. I served it with marinara. 

    Recipe Notes-

    • Adjust the salt and the spice according to your preference.
    • Do not overcrowd your air fryer. Leave some space for even frying.
    • The total cooking time is 10 to 12 minutes. I cooked in batches and first air-fried them for 10 minutes and then combined both the batches and cooked for just 2 minutes, which is optional. Depending upon how crispy you want your fries, you can cook accordingly. 
    • I went with basic seasoning. Instead of chili powder, you can add dried herbs or other spices like cajun seasoning or peri-peri spice powder, etc. 
    • Instead of almond flour, you can use panko bread crumbs also.

    • 250 grams zucchini cut into ¼ to ½ inch thickness
    • 1 tsp salt or to taste
    • 2.5 tbsp almond flour
    • 2.5 tbsp corn starch
    • ½ tsp red chili powder or to taste
    • 1 tbsp oil divided

    Instructions

      This recipe has potential but that teaspoon of salt makes them completely unpalatable. Next time I’ll salt very lightly and blot some of the moisture before tossing them with the coating mixture.

      Zucchini fries look so crispy and crunchy and love how it has turned out so good with minimal oil. I have been doing research to buy air fryer for past two months. Still in confusion to finalize the model. Should get one soon.

      I am loving the idea of these fries , fries have been a favourite with me ever since I have been a kid . Now obviously 40 years back Zucchini was not available in India , and it was potato fries . With the changing trend we have such a wonderful , healthy option .
      Everything about this recipe is perfect ! From the ingredients to the procedure – absolutely a keeper recipe !
