Here is my delicious and flavorful air-fryer roasted acorn squash with pesto and pine nuts!

– acorn squash  –  oil – salt or to taste – ground pepper  – pesto – pine nuts – chili flakes

Simple & easy-to-follow

Step 1

– Wash the acorn squash thoroughly. Slice a small portion of the bottom. Trim the edges and cut it. Scoop out the flesh using an ice-cream scoop.

Step 2

 – Chop them lengthwise into four or slices.

Step 3

– Preheat your air fryer. Oil the acorn squash both on all the sides.

Step 4

– Place the acorn squash in the air fryer basket, the cut side top.

Step 5

– Air fry the acorn squash for 6 minutes.

Step 6

– Carefully flip the acorn squash so the cut side is down. Air fry the acorn squash.

Step 7

– Remove the acorn squash from the air fryer. Spread the pesto sauce on each slice like below. Sprinkle the pine nuts.

Step 8

– Place the acorn squash slices back into the air fryer basket and air fry it.

Step 9

– Remove it from the air fryer basket and serve warm!
