Okra Raita

– 1 tbsp oil – 1.5 cups okra chopped  – 1 tsp cumin powder divided – ½ tsp red chili powder – 1 cup yogurt – ½ cup water – 1 tsp salt – 2 tbsp cilantro chopped To Temper: – 1 tsp oil – ½ tsp mustard seeds – ¼ tsp hing/asafoetida – ½ tsp chana dal – ½ tsp urad dal

Ingredients

– Heat a pan and add oil. When the oil is hot, add the chopped okra, cumin powder and red chili powder.

– Mix thoroughly and make sure the spices are coated evenly.

– Now cook the okra over medium-low heat until it is nicely roasted and charred like below. The okra should have a crunch.

– Turn off the heat. Let the okra cook a bit Prepare the Yogurt.

– Prepare the Tempreing. – Mix the Raita.

– Gently mix them. Add the remaining cumin powder and serve it with any rice variety.
