Whisk together the olive oil, balsamic vinegar, salt, and pepper, if using. Let it sit for 5 minutes.
In a large bowl, add all the veggies, except the croutons. Add the salad dressing and toss until evenly coated. Add the croutons and serve immediately.

Adjust the veggies proportion according to your preference.
Use romaine or iceberg lettuce or opt for a salad mix kit.
Add the dressing just before serving.
Add heirloom tomatoes or cherry tomatoes for more color.
Pickles are optional, and it's optional to chop the pepperoncini peppers too.
