Instructions
Prep Work
Finely Chop the onions and tomatoes.
Wash the rice and soak it in water.
Remove the stems from mint leaves and pulse it in blender along with green chillies without adding any water.
Steps
Heat the kadai and add the oil.
Once the oil is hot, add the fennel seeds and onions.
Saute them till the onion turns translucent.
Now add the ground mint and green chilly mix and cook for couple of minutes till the raw smell of mint goes.
Then add the chopped tomatoes, salt, red chilly powder and garam masala powder.
Mix well. Cover and cook for 5 minutes.
Mash the tomatoes well with ladle and cook till the tomatoes become soft. Turn the heat off.
Now drain the water from the soaked rice and add it to the rice cooker.
Add the tomato mix and 4 cups of water.
Check for salt. If required add more.
Turn on the rice cooker and let it do its work.
Once the rice is done, let it rest for 5 minutes and slowly mix the rice and garnish with cilantro/mint
That’s it. Tomato rice is done. Serve it hot with your favorite raita.
Notes
