Apple thokku - Grated apple pickle with the touch of bitter, sweet, hot and sour. A great side for idly, dosa and curd rice.

- Apples – 2 I used two big crisp apples
- Salt – 1.5 tsps
- Red chilli powder – 1.5 tsps
- Methi powder / Fenugreek powder– 1.5 tsps
- Mustard seeds – 1 tsp
- Oil – 1 tbsp + 1 tbsp
- Hing - 1/2 tsp
- Turmeric powder - 1/2 tsp
Peel the apple skin and grate the pulp part. Check the sweetness and sourness of the apple and adjust the spices accordingly.
Heat the kadai and add 1 tbsp oil.
Once the oil is hot, add mustard seeds. As they start to splutter add the methi powder and hing.
Now add grated apple, salt, turmeric and chilly powder.
Mix it well and let it cook for about 10 minutes. (Do not cover).
Now add another 1 tbsp of oil and mix well. Let all the moisture evaporate.
Once the oil gets separated, turn off the heat.
