Add the shishito peppers, grated garlic cloves, salt, and olive oil in a mixing bowl.
Mix well with hand and ensure all the ingredients are well combined and evenly coated.
If needed, preheat the air fryer according to the manufacturer's instructions. I preheated the air fryer for 5 minutes at 370 deg F. Add the shishito peppers to the preheated air fryer basket.
Air fry for 4 minutes at 400 deg F. Here is how it looks after 4 minutes.
Now gently toss them and air fry again for 3 to 4 minutes at 400 deg F. Depending upon how you like your peppers, adjust this timing.
Remove from the air fryer, drizzle some soy sauce (and some salt, if needed), and serve warm.
Notes
Adjust the air frying temperature as per your texture/char preference.
There is no set measure for the garlic. Adjust the garlic amount as well as the salt to your liking.
You can add up to 3 tsps of olive oil for this measure, and you can use the oil of your choice.
Stove-top instructions
In a large skillet (preferably cast iron), add the oil and heat over high heat.
Parallelly, mix the grated garlic, salt, and shishito peppers. Add these peppers to the skillet and cook until the peppers are charred and blistered. Toss them as required.
Oven instructions
Preheat the oven at 425 deg F. Line a baking tray with aluminum foil or parchment paper.
Add the shishito peppers, grated garlic cloves, salt, and olive oil in a mixing bowl. Mix well and add the peppers to the baking tray.
Bake for 8 to 10 minutes, shaking them halfway through.
