Bring 2 cups of water to boil. Add the salt and one tsp of olive oil.
Add the pasta and cook according to the timing instruction mentioned in the package.
I cooked it for 5 minutes.
Save ¼ cup of pasta water and drain the rest.
Now add the remaining olive oil, pesto, and olives. Mix it well.
Warm it over low heat for a couple of minutes or microwave it for one minute.
That's it. Orzo pasta is ready.
Notes
Do not overcook the pasta. Make sure it is aldente.
I used whole wheat orzo; you can use any variety.
Instead of tomato-basil pesto, you can add plain basil pesto and chunks of mozzarella and cherry tomatoes or play with your favorite condiments.
After adding the sauce, no need to cook again as the pasta might break. So just cook the pasta with the sauce for a couple of minutes over low heat or microwave it.
