Instant Pot Rice and Walnut Kheer

I am wishing you all a very happy and a prosperous new year.  Today I am going to share a sweet recipe prepared in my instant pot. It is the rice and walnut kheer or the Akhrot kheer. This is a super simple recipe with just 4 ingredients that can be whipped up pretty easily. It’s is rich and decadent kheer with the goodness of walnuts. Today I am sharing the instant pot method but please check the notes to see how it can be prepared on stove top too.

I love kitchen gadgets, especially the ones that help in our day to day cooking.  By now, you would have realized how much I love my cookers.  :-) Yes, I regularly use all my three cookers (pressure cooker, rice cooker, and slow cooker), my coffee maker, magic bullet (mini mixer) and of course the wet grinder. Without these, it’s hard for me to survive. (No, I am not exaggerating)  Now Instant pot joins this lot too.        

What is  Instant Pot and why is Instant Pot

Instant Pot website puts is perfect, Instant pot is an intelligent multi-cooker, capable of completely replacing pressure cooker, slow cooker, rice cooker/porridge maker, sauté/browning pan, steamer, yogurt maker and stockpot warmer. Most importantly, Instant Pot cooks meals faster with less energy while preserving more nutrients.

I don’t have any complaints about pressure cooker or slow cooker but to have all functionalities in one pot is really amazing. For people who have less space, this is a great boon. Every time, I read about instant pot, I came across the word babysitting. :-) The main advantage with IP is you don’t need to babysit. You can continue with your work until it beeps  (it automatically goes to warm mode) and you can simmer or saute in the same pot and serve hot. For me, the fact that it is energy efficient and convenient was one among the key factors. From this year,  vaandu has few more classes in the evening and with the drop-off and pick-up job I need to plan our meals well ahead. If miss to cook dal or slow cook sambar, I am screwed. But now I can rely on this IP and can’t wait to try day to day simple recipes. I am not going to let go off of my other cookers, will be sharing recipes prepared in those cookers too. :-)

Before using Instant Pot (IP),

  • Please read the manual carefully. Do the pre-test.
  • Understand the release modes. (Quick Release, Normal Pressure Release)

I first tried rice in my IP and slowly moved on to other recipes. I am still in the learning process and will try to explain each and every functionality as I explore them. I know with so many functionalities, each and every recipe can be prepared in multiple ways in IP and I am open to your thoughts and ideas too. I do not claim that this is the right and only way to prepare the kheer. I am just sharing what tried in my IP.

Instant Pot Rice and Walnut Kheer

Coming back to this kheer, I learnt this recipe from my Aunt who learnt it from her neighbors when she was Delhi. Apparently, this is one of the most popular kheer in Delhi I believe. It is a simple rice kheer prepared with Basmati rice and with fresh ground walnuts. We all know that walnuts are rich in omega-3 and also it has high amounts of antioxidants. So when my aunt shared this recipe, I tried it right away and what’s better than sharing it on a new year’s day?  The basmati rice cooked in milk along with ground walnuts, adds a unique flavor to this recipe. I would recommend using basmati rice but you try substituting with other rice varieties too. ried it

I didn’t add any other condiments like elaichi or saffron and also didn’t do ghee tempering. We just wanted to relish the rice and walnut combo. But you add other condiments and nuts to make it richer. 

Instant Pot Rice and Walnut Kheer

Ingredients:

  • Basmati Rice – 1 cup
  • Milk – 5 cups
  • Water – 1 cup
  • Walnuts – ½ cup heaped
  • Sugar – 1.5 cups
  • Condensed Milk – 2 tbsps (optional)

Steps:

  • Wash the rice and add it to the inner pot of the IP.
  • Add two cups of milk and half of the sugar(3/4 cup) and mix well.
  • Now set the IP in the porridge mode and make sure the vent is closed.
  • Let the IP do its work.  The porridge mode is automatic and it takes 20 minutes(See, on festival days, you can focus on preparing other recipes while letting the IP to manage the kheer)
  • Meanwhile, soak the walnuts in the water for 15 minutes and ground them into a coarse paste by adding 1/2 cup of water.

  • Once the IP started to beep, I let it go to warm mode for 5 minutes and did a quick release of pressure by opening the vent.

  • Mash the rice well with a ladle.
  • Now change the IP setting to saute mode now and add the remaining milk, sugar, walnut mix, condensed milk.
  • Mix well and let it simmer in saute mode for 3 minutes.

After 3 minutes, unplug the IP and that’s it. Yummy rice and walnut kheer is ready. Here is the quick IP formula for this recipe,

Porridge mode + Quick Release + Saute mode for 3 minutes.

Instant Pot Rice and Walnut Kheer

Notes:

  • If you are walnuts are broken, use about 3/4 cup.
  • Adjust sugar as per your preference. As I mentioned you can use elaichi, saffron for added flavor and also you can temper nuts in ghee and add it to the kheer.
  • Basmati rice is preferred but other rice varieties can be used too.
  • Stove Top Method:
    • Cook the rice in 2 cups of milk and with 1 cup of water until the rice is mushy.
    • Now add the sugar and remaining milk and mix well.
    • Once the sugar is dissolved, add the walnut paste, condensed milk and bring to a simmer.
