Homemade Rose Syrup Jelly With China Grass

Here is simple homemade jelly prepared with rose syrup and lemon juice and it is set using china grass making it perfect for all vegans and vegetarians. Summer always calls for cool desserts and here is a quick and simple one.

Pretty much all kids love jellies and vaandu is no exception either. But every time I need to check for the ingredients and make sure I get the non-gelatin ones. When I got china grass for my jigarthanda recipe, I tried this jelly the very next day just with rose syrup and china grass. The gel strength of china grass was amazing and the jelly was ready in no time. Vaandu loved it and I started to prepare them in bulk. I wanted to click the jellies before vaandu grabs them but that didn’t happen until last week. I ended up preparing two batches and used one for the images.

I started to store them in small use and throw containers so that vaandu can take this as a snack also. The only key thing is you cannot pour the hot mixture directly into the container and at the same time you cannot let it sit to cool as it sets faster. When is luke warm, pour it into the small containers like below.

China Grass | Agar Agar 

Instead of china grass, you can use agar agar powder also. When I posted my panna cotta recipe in FB, one of my readers asked me regarding the proportions.  It mainly depends upon the gel strength.  I bought both china grass and the powder from amazon and the powder have 90% gel strength and I went with the ratio of 2:1. For two cups of liquid, I used 1 tsp of the powder. For fruit based purees I think you can go up to2 tsps but not more than that. 

For the china grass, there wasn’t any gel strength information. What I found was, you need to use grass for setting. I used up to 10 strands which was approximately 4 tsps. These are sometimes available as rectangular strips also. So it’s better to test them out before trying them out in any recipe. All you need to do is just use them with 1 cup of water and see how long it takes to set and how firm the jello is.  

Ingredients:

  • Water – 4 cups
  • China grass – 10 strands (when broken about 3 to 4 tsps)
  • Sugar -5 tbsps
  • Rose Syrup – 1/4 to 1/3 cup (I used the dabur rose syrup)
  • Lemon Juice – 1 tbsp

Steps:

  • Soak the china grass in water for about 15 to 20 minutes.

  • Then add sugar and mix well.
  • Now heat this mix until the china grass is completely dissolved.

  • Turn the heat off and add the rose syrup and lemon juice and mix well.
  • That’s it the jelly base is done. Pour it your favorite cups/molds or plain glass vessel and let it set. I kept in the refrigerator.

  • If you want to pour in a plastic cups like this, let it become luke warm.

I let it sit for unto 4 to 5 hours. Yummy home made rose syrup jelly is ready.

Notes:

  • Any fruit juice like black currant, pomegranate, mango can be added to prepared corresponding flavors.
  • Lemon juice is optional. But we like the sweet and sour taste.
  • Adjust the sugar and syrup according to your preference.
  • Instead of china grass, agar agar powder can be used.
