Cauliflower Soup

This is a creamy and rich cauliflower soup with carrots and celery cooked in vegetable broth and thickened using milk sauce. Again this is one of the recipe that I picked from the top 100 dishes from this site. The recipe calls for bouillon cube which is nothing but dehydrated stock or broth cube. You can cook it along with plain water to get the broth. I went with store bought vegetable broth.

I prepared this soup without the cheese as kiddo can’t reheat his lunch in the afternoon. Even though I keep the food in thermos cheesy foods and soups taste great when it is hot. So please add a cup of your favorite cheese when preparing the milk sauce. I prepared the slow cooker pasta and cake last week and this soup was pending. After coming back from our vacation, I prepared this soup in bulk. This soup became our life saver this week. This soup served as our lunch for two days and also for one dinner. When you have hectic work week, this soup is indeed a great option to prepare. It just involves two steps. Cook all the veggies in the broth. Prepare the milk sauce and combine the both and you are done. :-)

Here is what I did,

Ingredients: 

  • 1 medium head cauliflower, broken into florets
  • 1 medium carrot, cubed
  • Chopped Celery – 1/4 cup
  • Butter – 3 tbsps.
  • Vegetable broth – 32 oz can
  • All purpose flour – 3 tbsps
  • Salt – 1.5 tsps (Adjust according to the sodium content in your broth. I used low sodium organic broth)
  • Pepper – 1 tsp (adjust according to your taste)
  • 2 % milk – 2
  • Pepper sauce optional.

Steps:

  • In a large bowl, combine the cauliflower, carrot, celery and vegetable broth.
  • Bring to a boil.
  • Simmer for 12-15 minutes or until vegetables are tender (do not drain the broth).

  • When you simmer the vegetable broth mix, in another large saucepan, melt butter.
  • Stir in the flour, salt and pepper until smooth.

  • Gradually add milk. Bring to a boil until thickened. Reduce heat. At the stage add the cheese and the pepper sauce if you are using

  • Combine both the broth and milk sauce. I added my broth mix into the mix as you can see my milk sauce pan is comparatively bigger than the other.
  • Mix and let it simmer for a minute and turn off the heat.

That’s it. The soup is ready. Serve hot with bread or biscuits.

Notes
  1. You can use white pepper instead of black pepper.
  2. Adjust the salt and spice according to your taste preference.
