Microwave Fruit Custard

Fruit Custard is one of my favorite dessert. I am not a sweet tooth person. I always prefer fruit based desserts. Fruit custard fulfills that need. With the goodness of milk, custard powder and my favorite fruits like banana and apple, it is one of the yummiest dessert. It is also one of the easiest dessert to prepare. This microwave version takes less than 30 minutes to whip this up.

I think I have mentioned about my undergrad friends in this blog before. Lets call them VN and VP. I am really luck have them both around. We decided to have a small get-together on Jan 2nd. VP came to my place first and we had lunch together and then we all then went to VN’s place for dinner. I prepared typical lunch with sambhar, rasam and kootu and for dessert this is what I prepared – Fruit Custard.  I had apples and bananas at home but I couldn’t find pomegranate in our close by shops. That’s when I decided why not serve with rose syrup to give additional flavor and color. I like grapes in custard but I usually don’t use melons and citrus fruits. But adjust the fruits according to your preference. So here is what I did,

    FruitCustardTop

Ingredients:

  • Milk – 3 cups
  • Saffron threads – a pinch
  • Custard Powder – 4 tbsps (I used the vanilla flavored one)
  • Sugar – 3 tbsps (adjust according to taste)
  • Banana – 1
  • Apple – 1
  • Rose Syrup – as required

Steps:

  • Microwave the milk for 5 minutes. Keep stirring it for every 2 minutes and this ensure it doesn’t overflow.
  • Now add the saffron threads, sugar and custard powder.

MilkWithSaffronMilkWithCustardPowder

  • Mix well and make sure there aren’t any lumps.
  • Let it sit for 10 minutes. This helps the mixture to thicken up.

MixedMilk

  • Meanwhile chop the fruits.
  • If the mixture hasn’t thickened to your desired consistency microwave for couple of minutes.
  • Then add the fruits and let it sit.

FruitCustard

  • Either you can refrigerate them or keep it at room temperature.

Just before server add a dash of rose syrup. :-)

Notes:

  • Please add fruits of your choice.
  • Instead of rose syrup any other fruit essence can be used.
  • You can prepare the same in stove top also.
