Green bean casserole is one among the popular recipes that is prepared for Thanksgiving. But as I posted a casserole recipe yesterday, I thought I will reserve this for later and today posting a kid’s friendly recipe – mashed potatoes. I love this recipe too. The way we cook potatoes and also how we are consuming it makes a huge difference. It’s a starchy vegetable loaded with carbs. When you have it along with protein filled diet it provides you the sufficient carbs. But when we have it with rice it adds up to our calories. As everyone say – balanced meal is the key for our health.

The analyst in me always makes me to research about anything and everything. I do refer books but still I don’t know if I will be able to survive without google. Here are some of the interesting websites that explains more about potatoes and its nutrients.

So coming to this recipe this is perfect toddler friendly food. Vaandu had Raagi koozh till 1.5 years and then I introduced this. But he has a love hate relationship with this mashed potato recipe. It shouldn’t be too garlicky, it should be slightly sweet but if I serve this along with soup or gravy he loves it.

As it’s for the festive season, I added heavy cream. But you can also use either 2% or whole milk instead of cream. Russet potatoes are usually recommended but I just went with regular golden potatoes. Chives are commonly added to this recipe but I didn’t add it. (Thanks to Vaandu’s taste preference) Any herbs of your choice can be added.     MashedPotato

Here is the recipe,

  • Potatoes – 5 to 6
  • Water for boiling the potato
  • Garlic clove – 1
  • Salt – 1 tsp
  • Pepper – 1.5 tsp
  • Heavy Cream or Milk – ½ cup to ¾ cup depending upon the consistency
  • Butter – 2 tsp
  • Finely chopped herbs of your choice (optional) – 1 tsp

Steps:

  • Boil the water and add the salt.
  • Once the water boils add the potatoes and the garlic and let it become tender completely.
  • The consistency should be – when you insert a fork it should go in smoothly and should be able to mash it.

BoiledPotatoes

  • Let it cool and peel of the skin and crumble the potatoes slightly with fork.

PeeledPotatoes

  • Now heat the pot & add the butter and these potatoes.
  • Add the cream/milk and pepper powder and mash it with a potato masher. If you don’t have a masher just use the regular ladle and press it nicely.

  • Let the potatoes and the cream incorporate well and add additional cream if required and let it cook for couple of minutes and that’s it.

Ingredients

Notes
  1. Heavy cream can be replaced with any milk of your choice.
  2. Herbs like chives and rosemary can be added.
  3. More garlic cloves can be added according to your taste preference.
