Pita Pocket Salad Wrap

For this week’s blogging Marathon, the theme is “Rolls and Wraps”.  I got this recipe from my colleague. It’s a very simple salad recipe that can be prepared under 30 minutes. A protein packed salad with garbanzo beans and hummus. It is very filling as we are wrapping the salads inside the pita pockets

 How do I pack this for work?

  • I just take the greens, salad, pita pockets and hummus separately.
  • I take the dressing with added salt and pepper seperately.
  • Before lunch I just spread the hummus in the pita pocket and mix the required salad with dressing.

You can add avocado to make it more healthy.

    Ingredients:

For Filling:

  • Mixed greens – a handful
  • Cucumber – 1 (chopped)
  • Cherry tomatoes – 5 (chopped)
  • Olives – 5 (chopped)
  • Garbanzo beans – 1/4 cup
  • Feta cheese and onion as required (optional and I didn’t use them)

Dressing:

  • Olive oil – 2 tbsp
  • Balsamic Vinegar – 1.5 tbsp
  • Salt and pepper

For Wrap:

  • Multigrain Pita pocket wrap
  • Hummus – as required

Steps:

  • Chop the cucumber, tomatoes, olives and mix it with the garbanzo beans.

  • Spread the hummus inside the pita pocket like below.

  • Now fill in the pita pocket with the salad and enjoy

Notes:

  • Feta cheese can be added to the salad.
  • Onions and other veggies can added too.
  • Adjust the dressing proportions according to your preference.

    • Thanks. Yeah pa those are ready to eat pita breads only. If its in room temperature you can eat them just like that or you can warm them in tawa like you do for ready made rotis. At work I just use the bread toaster and toast them. :-)
