Avial

Avial is one of the popular dish both in  Tamil Nadu and also in Kerala. It is an important and mandatory dish in the Onam Sadya. It’s also one of the easiest dish to prepare. This recipe was given by my mom. She doesn’t add the tadka,  ie temper it with mustard seeds. I usually prepare it without tempering too following my mother’s steps.

Also Avial is served along with adai. But somehow I prefer it with rice and kaara kari.

Ingredients:

  • Mixed vegetables – 4 cups (I usually add Plantain, Drumstick, Potato, Carrot, White/Red Pumpkin, Brinjal, Chayote)
    • Usually we don’t add lady’s finger, bitter gourd, radish and turnips.
  • Fresh grated coconut – 1 cup
  • Green chillies – 3 to 4 (depending upon your taste preference)
  • Yogurt – 1 cup
  • Coconut oil – 2 tbsp
  • Curry leaves – 2 strands
  • Salt – 2 tsps (Adjust according to your taste preference)
  • Turmeric – a pinch

Steps:

  • The main difference between these methods are how and when the yogurt is added.  In method 1 we grind the coconut and green chilly and mix it with yogurt and add it to the avial. In method 2 we add the yogurt after the avial is done. Be careful and make sure yogurt doesn’t get churned out.
  • Make the veggies are soft and crunchy not mushy.

Method 1:

  • Grind the coconut and chillies together.
  • Mix this grinded mixture and turmeric in 1 cup of yogurt and keep it aside.
  • Boil all the vegetables in your preferred way either in microwave or just add boil the veggies by adding water and cover it and cook till they become tender. 
  • Heat the kadai and add the boiled vegetables and salt in a kadai.
  • Add the yogurt coconut paste.
  • Allow it cook for 5-10 minutes.
  • Don’t let it boil. Just as when the froth forms add the curry leaves and coconut oil and turn the heat off. This is just to make sure the yogurt doesn’t churn out.

Method 2:

  • Grind the coconut and chillies together.
  • Boil all the vegetables in your preferred way either in microwave or just add boil the veggies by adding water and cover it and cook till they become tender. 
  • Heat the kadai and add the boiled vegetables and salt in a kadai.
  • Add the grinded coconut paste also.
  • Allow it cook for 5-10 minutes.
  • Let it boil. Add the coconut oil and curry leaves and turn the heat off.
  • Now add the yogurt and mix well. This will ensure the yogurt doesn’t churn out.
