Aval Paayasam | Poha Kheer

Today I am going to share a paayasam/payasam or kheer recipe. It is one of the easy and quick paayasam to make. It just takes half an hour to prepare this, yummy paayasam. I make this on any festive days, especially if it falls on a weekday.

I know I am posting after a year and the comeback recipe has to be a sweet one right? What a year it was? A hectic year with projects, assignments, quizzes. Oh boy! I have one more year to complete my masters. Somehow managed to click and post this recipe. So without any delay here comes the aval payasam or the poha kheer.  

Ingredients:

  • Aval /Poha – ½ cup
  • Sugar – ¾ Cup
  • Milk – 1 liter / Approx 4 cups (whole milk or 2% milk)
  • Elachi Powder / Cardamom Powder – 2 tsps
  • Ghee – 2 tsps
  • Cashews and Raisins – 2 tsps

Method:

  • Bring the milk to boil. Keep stirring it continuously so that it doesn’t over boil spill outside.
  • Keep stirring for about 10 to 15 minutes, and now the milk would have reduced to 3/4 quantity.
  • Now add sugar and cardamom powder and stir until the sugar dissolves.
  • Wash the aval or flattened rice and add it to the milk.
  • Allow it cook well. It just takes 5 to 7 minutes.
  • Once the aval becomes soft, turn the heat off.
  • In a separate tempering pan, heat the ghee and roast the cashews and raisins until they turn golden brown. Add this to the payasam.

Serve it hot or cold.

Notes:

  • Make sure you keep stirring the milk and also scrape the sides as it reduces.
  • Adjust the sugar as per your preference.
  • You reduce the sugar quantity and add condensed milk to make it creamy.
